There are days more than other days that I miss my mom. T is one of those days from checking out what Food #Holidays happen today. On August 15th it’s National Lemon Meringue Day. I can see my mom and dad preparing meals for the Holidays and my mom making Banana Pudding with Meringue.
Then my mom would move on to her Pies. Most of my mom’s Pies always had a Meringue topping. My sister and brother along with my dad couldn’t wait for my mom to finish the Pies to be finished. Then for dinner to be over so they all could have a slice or two of her Pie especially her Lemon Meringue Pie.
My brother also liked her Coconut Meringue Pie. Would you want a slice of her Pie? If so which one and why. Back then I didn’t want any of those Pies with Meringue on them. I still don’t. Just give me a slice of Apple Pie with Cool Whip although Reddi-Wip was fine as well. Sometimes Ice Cream but more than that Cool Whip please.
In Elementary School I was introduced to Cool Whip Chocolate Pie with Chocolate Pudding, Graham Cracker Crust Pie Shell and Cool Whip on top for the topping. Doesn’t that sound amazing. Still to this day these are the only two Pies I will eat.
Charlie will not eat any Pie of any kind but David will eat any Pie you put in front of him. Just like his dad. David’s dad hasn’t been feeling well so Charlie and I found a recipe for a Lemon Meringue Pie to make David St. for dessert this evening. Would you want a slice of the Pie?
My mother in law Sherry loves Mrs. Baird’s Fried Apple Pie and David Sr loves the Apple Pie. Both of them are diabetics and shouldn’t have dessert of any kind but I found a recipe for Sugar Free Lemon Meringue Pie and I’ve shared the recipe with you below I may make them for dinner this evening.
