Here’s a fruitcake recipe that gives you the classic, rich, boozy holiday loaf people either fiercely love or pretend to love. I’ll give you a version that’s flavorful, moist, and not the dreaded brick or doorstop as a lot of people refer to as a Fruitcake.

Ingredients

Fruit Mix

  • 2 cups mixed dried fruit (raisins, currants, chopped apricots, cherries, cranberries)

  • ½ cup rum, brandy, or orange juice (for soaking)

Cake Batter

  • 1 cup unsalted butter, softened

  • 1 teaspoon baking powder

For Brushing (optional but amazing) Use Extra rum or brandy

Instructions

1. Soak the fruit (overnight if possible)

Combine dried fruit, nuts, and candied peel in a bowl. Pour in the rum/brandy/orange juice. Cover and let it soak for several hours or overnight. This step makes the cake incredibly moist and flavorful.

2. Prepare the batter

  1. Preheat oven to 300°F (150°C).
  2. Grease and line a loaf pan or round cake pan with parchment.
  3. Cream butter and brown sugar until fluffy.
  4. Add eggs one at a time, mixing well.
  5. In a separate bowl, whisk flour, baking powder, salt, and spices.
  6. Add dry ingredients to the butter mixture.
