My best friend got some devasting news from her Doctor the other day and to turn things around she would need to lose between 50 and 50 pounds. Debbie is planning on meds from the Doctor which is fine for her because she has insurance.
My family doesn’t have insurance and I could say that is what is hindering me from losing weight but it isn’t. Its the way I live my life and the things I eat and not exercising and the list could go on and one. I told Debbie she could change things and take her life back and so can I.
Instead of waiting until July I want to start today. I looked through the #Holidays and found out June 2nd was National Rotisserie Chicken Day #RotisserieChickenDay. Even though David and even Charlie doesn’t mind Rotisserie Chicken it isn’t something we have.
Things our going to change I have Chicken in the Ice Box and I plan on trying to make Roasted Chicken or Rotisserie Chicken this week. Do you have any tips for me or what I need to make Rotisserie Chicken in? Recipe for Rotisserie Chicken
Equipment
Rotisserie Oven or rotisserie spit
Cast Iron Skillet Using this recipe will let me use my dad’s cast Iron Pans if you need one I would be happy to share my dad’s Cast Iron Pans with you.
Ingredients 1x2x3x
- 1 small whole chicken about 3.5 to 4 lbs
- 1 tablespoon olive oil
- ½ teaspoon paprika
- ¼ teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- salt and black pepper to taste
Instructions
- In a small bowl, combine paprika, smoked paprika, garlic powder, onion powder. Add 1 teaspoon salt and ½ teaspoon pepper (more or less to taste) and mix well.
- To prepare the chicken, dab the skin dry with paper towels.
- Rub the outside of the chicken with olive oil and season generously with the spice mixture.
- Gently fold the wings behind the chicken. Using kitchen twine, tie the legs together. Ensure the cavity is empty.
To Cook on a Rotisserie
Remove from the rotisserie and serve.
Center the chicken on a rotisserie spit. If using a grill rotisserie, preheat to medium heat, 350°F. (see notes for oven directions).
Cook chicken for 18-22 minutes per pound, or until the chicken reaches 165°F on a meat thermometer. A 3.5lb chicken will cook for 60-80 minutes.
Once the chicken has reached the right temperature, turn off the heat and allow the chicken to rotate for 15 minutes without heat.
