Life is funny I’ve been so far behind from everyone in our home being sick I might never catch up so it’s all in the Lord’s hands. When I went to look at the #Holidays this morning I found out October 21st is Apple Day #AppleDay and October 21st is also International Day of the Nacho #DayOfTheNacho.
It’s been a while since we’ve had #Nacho’s in our home and that may be one of the dinner’s I made this week. But I had heard of Apple Nacho’s in the past and was thinking I might make them for David and his dad for dinner. Would you like to have Apple Nacho’s with David and his dad?
Since today is a day to celebrate all things Apple, I think David should either go to Arby’s and get us a Apple Turnover or to McDonald’s for a Fried Apple Pie. When I bought Pepperidge Farm’s Apple Strudels they didn’t have the white Icing Glaze on them we like and was kind of bland.
I’ve included a recipe for Apple Strudel for you below with Ground Beef Nachos and also Apple Nachos so all you will need to do this evening is go to the Grocery Store for the ingredients you will need. Would you want to go with me?
Apple Pie Nachos
Ingredients
- 4 large Granny Smith apples
- 35 large marshmallows
- ¼ cup butter
- 35 caramels
- 1 tablespoon evaporated milk
- ¼ cup peanuts
- ¼ cup mini semi-sweet chocolate morsels
- 2 tablespoons chocolate syrup
Instructions
- Slice apples and arrange them on a large platter.
- In a saucepan, melt marshmallows and butter until creamy. Set aside.
- In a microwave-safe dish, melt caramels with evaporated milk in 30-second intervals, stirring until smooth.
- Drizzle the marshmallow cream over the apple slices, followed by the caramel sauce.
- Add a drizzle of chocolate syrup and sprinkle with peanuts and mini chocolate chips.
- Serve immediately and enjoy the gooey goodness!
This recipe for Apple Nacho’s serves 8 and takes about 17 minutes to prepare. I like the recipe because it’s a fun, finger-friendly treat that’s great for parties or cozy nights in. Get the kids into the kitchen and let them help you make this recipe to share with your friends and family.
Ground Beed Nacho’s (Charlie’s favorite) In our Home there called Dad’s Nacho’s by C even though I taught David how to make them.
Ingredients
1 lb ground beef
1 packet taco seasoning (or homemade blend) You can use any brand you like
1 can (15 oz) refried beans or Black Beans if you prefer them. We use Refried Beans, and you can use any brand.
1 bag tortilla chips Charlie likes Tostito’s Scoop’s, but we’ve used other brands and style of Chips as well.
2 cups shredded cheddar or Mexican blend cheese We use Velveeta Block Cheese in our home and melt it with Milk and pout it over mixture.
Optional toppings: diced tomatoes, jalapeños, sour cream, guacamole, green onions, olives
Instructions
Preheat oven to 400°F (200°C).
Cook the beef in a skillet over medium heat until browned. Drain excess fat.
Add taco seasoning and a splash of water. Simmer for 2–3 minutes.
Warm the beans in a separate pan or microwave until spreadable.
Layer tortilla chips on a large baking sheet.
Spoon refried beans over chips, followed by seasoned beef.
Sprinkle cheese generously over the top.
Bake for 8–10 minutes until cheese is melted and bubbly.
Add toppings of your choice and serve immediately!
Classic Apple Strudel (Apfelstrudel)
Ingredients
- Dough:
- 1½ cups all-purpose flour
- 3 tbsp vegetable oil
- ⅓ cup lukewarm water
- Pinch of salt
- Filling:
- 14 oz apples (peeled, cored, thinly sliced)
- 3 tbsp raisins (soaked in 4 tsp rum)
- 2 tbsp sliced almonds
- 1 tbsp ground almonds
- 1 tsp vanilla sugar
- ¼ tsp gingerbread spice
- Assembly:
- 2 tbsp melted butter (plus more for brushing)
- Confectioner’s sugar (for dusting)
Instructions
- Prepare the dough:
- Mix flour and salt on a work surface.
- Create a well, add oil and water, and knead into a pliable dough.
- Cover and let rest in a warm place for 25–30 minutes.
- Make the filling:
- Mix sliced apples, raisins, almonds, vanilla sugar, and spice in a bowl.
- Roll out the dough:
- On a floured kitchen towel, roll dough thinly, then stretch it by hand until paper-thin.
- Assemble the strudel:
- Sprinkle ground almonds over the dough.
- Place apple mixture on the bottom third.
- Use the towel to roll the dough over the filling, brushing with melted butter after each fold.
- Trim edges and place seam-side down in a baking tin.
- Bake:
- Brush top with melted butter.
- Bake at 350°F (180°C) for 20–25 minutes until golden.
- Serve:
- Dust with confectioner’s sugar.
- Optional: serve with vanilla sauce or ice cream.
