In highschool back when the Diosaurs roamed the Earth as Charlie likes to say David and I took Home Econimics which I wish they still taught in schools. One dessert we learned to make was No-Bake Chocolate Oatmeal Cookies I used to make all the time when Suzzane was little.
As much as I hate to admit it I can’t remember if Suzzane ever had a No-Bake Chocolate Oatmeal Cookies as for Charlie I know he hasn’t which means its time to make the Cookies for Charlie and to surprise David with some because he is always asking about them. No-Bake Chocolate Oatmeal Cookies combine chocolate, peanut butter, and quick-cooking oats into chewy, fudgy bites that set up beautifully on wax paper. If you’ve never made them here is a recipe on how to make them:
No-Bake Chocolate Oatmeal Cookies
Ingredients:
- ½ cup butter
- 1½ cups white sugar
- ½ cup brown sugar (optional for extra moisture)
- ½ cup milk
- 4 tablespoons cocoa powder
- Pinch of kosher salt
- ½ cup creamy peanut butter
- 2 teaspoons vanilla extract
- 3 cups quick-cooking oats
Instructions:
- In a 4-quart saucepan, combine butter, sugars, milk, cocoa, and salt.
- Bring to a rolling boil and hold for 1 minute—don’t overboil or the cookies may turn dry.
