I wanted to remind you with the cost of food rising feeding a family doesn’t have to break the budget. With a few pantry staples and about 30 minutes, you can create a meal on a budget everyone will enjoy.

One of my favorite quick Sunday meals is Cheesy Chicken & Rice Skillet.

30-Minute Meal: Cheesy Chicken & Rice Skillet– This is a warm, filling meal that feels like comfort food but is easy on the wallet.

Ingredients

2 cups cooked rice
1 cup cooked chicken (rotisserie works great)
1 can cream of chicken soup
1/2 cup milk
1 cup shredded cheddar cheese
1 cup frozen mixed vegetables
Salt and pepper to taste

Instructions

  1. Heat a large skillet over medium heat.
  2. Add the cooked rice, chicken, and vegetables.
  3. Stir in the cream of chicken soup and milk.
  4. Cook for about 10 minutes, stirring occasionally.
  5. Sprinkle cheese over the top and cover until melted.
  6. Serve warm and enjoy with your family.
