Banana Cream Rice Pudding Instant pot

David has always enjoyed Rice Pudding and his legs have been cramping more and more. I went online to see what would help with the cramping and they said to eat Bananas for the potassium. Since David is off in the morning, I think I will surprise David with breakfast, and I will make DavidExplore The Best Air Bikes for Maximum Performance – The Mommies Reviews which means a trip to the Storeroom to get one of my Instant Pots because all we have here is my Crock Pot.

To give Charlie and I time together I am going to see if his wants to go grocery shopping for the ingredients we will need. Which as you can see from the picture below a lot of the ingredients many already be in your pantry or if this is a one time deal you might be able to borrow some from a friend or family member. Which I would prefer to do with the Vanilla.

Ingredients

1 c white rice

1 ½ c water

2 cups of milk

½ c sugar

2 overripe bananas

1 tsp vanilla

Steps:

Add rice and water to the instant pot.

Seal and select high heat.

Set the timer for 3 minutes.

It will take about 10 minutes before the timer begins to countdown.

When the timer beeps, turn off the instant pot. 

After 10 minutes, quick release the steam.

Add milk and sugar.

Stir.

In a small bowl, smash the bananas and add vanilla and cinnamon.

Pour this into the rice.

Turn the instant pot to saute, and allow to cook until it comes to a boil. 

Remove the liner from the instant pot and allow to cool and thicken.

Serve warm or cold, with cinnamon sprinkled over the top and sliced bananas if you like.

Store leftovers in an airtight container in the fridge.

Makes 6 servings.
