February 5: World Nutella Day – #worldnutelladay

How are you? I thought I would share one of Charlie’s favorite snack foods with you Nutella. Did you know today is World Nutella Day #worlnutelladay? Looks like I need to make a run to the grocery store and pick up a jar for Charlie. Did you know most people eat Nutella on Bread or in recipes. Not Charlie he eats Nutella right out of the jar with a spoon. Before you say yuck. Remember as a mom we have to #Pickourbattles and this is Charlie’s snack for the week so as long as he eats it I don’t care how.

I did search recipes using Nutella this morning I found this recipe for Cookies I might see if Charlie would like to prepare in his Homeschool Baking Class. Would you like to help or back the cookies or would you like to have one or two Cookies? Because I think I pass but I wouldn’t be surprised if David wouldn’t try them.

Ingredients

  • 1 1/2 c. Nutella
  • 3 tbsp. brown sugar 
  • 1 egg + 1 egg yolk
  • 3/4 c. all-purpose flour
  • 3/4 c. chocolate chips (optional)
  • Flaky sea salt, for sprinkling

Directions

  1. 1Preheat the oven to 350°F. 
  2. 2In the bowl of a stand mixer, beat the Nutella and brown sugar on medium speed until glossy, about 2 minutes. Add the egg and yolk, beating well and scraping the sides of the bowl as needed. Add the flour and mix until incorporated, scraping the bottom of the bowl to ensure there are no flour pockets. Fold in the chocolate chips, if using. 
  3. 3Lay sheets of parchment paper on 2 cookie sheets. Roll dough into 1 1/2 tablespoon balls and press gently with the bottom of a glass. Bake until the edges of the cookies are set and no longer glossy, 8 to 10 minutes. Sprinkle with flaky sea salt and let sit for 3 minutes before transferring to a cooling rack.
