With us being sick this week, we missed celebrating a lot of #Holidays that happened in February including February 27 National Strawberry Day #NationalStrawberryDay. David loves anything made with Strawberries so I was thinking Charlie and I would make his dad a Strawberry Cheesecake for dessert.

While making the Strawberry Cheesecake I want to make a extra Cheesecake for David’s dad. Would you want to join us, and we can make one for your family as well? I might even make one to take to Lisa and Larry.

If your #Homeschooling your children, you could have them study Strawberries and make a Kid-Friendly Strawberry Cheesecake Recipe. If you have the opportunity, take your children on a homeschool #FieldTrip to a Pick Your Own Farm and let them pick Strawberries for dinner this evening.

Celebrate National Strawberry Day with a Sweet Treat!

February 27th is National Strawberry Day, and what better way to celebrate than with a dessert that’s as fun to make as it is to eat? This Kid-Friendly Strawberry Cheesecake is no-bake, easy to assemble, and perfect for little hands to help with. Whether you’re homeschooling, planning a family dinner, or just looking for a sweet afternoon activity, this recipe brings smiles and strawberries to the table.

Recipe: Kid-Friendly Strawberry Cheesecake

Ingredients

  • 1 ½ cups graham cracker crumbs
  • 5 tbsp melted butter
  • 2 tbsp sugar
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream, whipped
  • 2 cups fresh strawberries, chopped
  • ¼ cup sugar
  • 1 tbsp lemon juice

Instructions

  1. Mix graham cracker crumbs, butter, and sugar. Press into a springform pan and chill.
  2. Beat cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped cream.
  3. Spread filling over crust and chill for 4+ hours.
  4. Cook strawberries, sugar, and lemon juice until juicy. Cool and spoon over cheesecake.
  5. Decorate with extra berries and enjoy!

  • Let kids press the crust and decorate the top.
