June 2nd was National Rocky Road Day #RockyRoadDay not the Steet but the Ice Cream. Rocky Road Ice Cream is Marshmallow swirled through rich Chocolate Almonds and it has Coca in it. As much as I love Chocolate and Almonds I’ve never tried Rocky Road Ice Cream because I don’t like #Marshmellows. I don’t think Charlie has had Rocky Road Ice Cream either.
Before you ask me what about David. David I don’t know if David has had Rocky Road Ice Cream or not. My question for you is have you had #RockyRoadIceCream? If so what did you like or dislike about the Ice Cream and why?
Why not surprise your family this evening and make Homemade Rocky Road Ice Cream for dessert. I would make Rocky Road Ice Cream for David but the #Almonds would hurt his teeth. I wonder if I could leave the Almonds out. I could put them in the Chocolate Ice Cream before adding #Marshmellows for myself and save plain Chocolate Ice Cream for Charlie.
Recipe for Rocky Road Ice Cream
Prep Time: 5 mins Cook Time: 5 mins
Additional Time: 1 hr 20 mins Total Time: 1 hr 30 mins
Servings: 16 Yield: 2 quarts ice cream
Ingredients
1 (14 ounce) can sweetened condensed milk
½ cup unsweetened cocoa powder
2 cups heavy cream
1 cup light cream
1 tablespoon vanilla extract
1 cup miniature marshmallows
½ cup chopped pecans
Directions
Pour mixture into the canister of an ice cream maker and freeze according to manufacturer’s directions. Stir in marshmallows and nuts halfway through the freezing process.
Cook and stir condensed milk and cocoa in a medium saucepan over low heat until smooth and slightly thickened, about 5 minutes. Remove from heat and allow to cool slightly. Stir in heavy cream, light cream, and vanilla. Refrigerate until cold, about 1 hour.
