Saturdays and Sundays in my home are always busy as I work to catch up on post I missed throughout the week. Or house cleaning for the week. Most of the time lunch is the furthest thing from my mind. In my home Saturdays feel nonstop before the coffee even finishes brewing. Between laundry piles, grocery runs, tv playing in the background, and wondering what’s for lunch, it’s easy to reach for convenience foods just to survive the day.

That’s exactly why this homemade turkey and cheese lunchable box became one of our favorite busy Saturday traditions. Before I share the recipe with you I thought I would share how the recipe came about.

At noon one day, I looked inside the icebox and saw just enough deli turkey, cheese, crackers, and a few random snack items to make lunch work without spending another dollar. Instead of stressing over cooking a full meal, I turned everything into simple little lunchable boxes spread across the kitchen table.

Charlie thought it was the best thing ever because we were able to feed his friends without having to run to the grocery store. I liked it because it was easy to eat while working. David was even able to take one of the boxes for his lunch.

We wanted to let you know there is something about snack-style lunches that instantly makes an ordinary day feel fun. Maybe it’s the tiny compartments. Maybe it’s getting to mix and match bites. Or maybe it’s just the fact that you can let everyone build their own plate exactly how they like it.

I started slicing cheddar cheese into squares while apple slices soaked in a little cold water to stay fresh for David. You know Charlie and I aren’t going to eat Apples. Crackers went into one section, rolled turkey slices into another, and baby carrots with ranch filled the remaining spaces of Charlie and David’s box for a pop of color. Pretzels were tossed in at the last minute because Saturdays are meant to feel a little relaxed. When we have candy or desserts I like to add them as well.

The best part was realizing the whole meal fed our family for around five dollars. That’s cheaper than buying prepackaged launchable kits, and honestly, the homemade version tastes fresher anyway. Plus, it can be better for you.

Now these little lunchable boxes have become one of our easiest weekends reset meals. Sometimes we make them before movie afternoons. Sometimes they turn into picnic lunches on the living room floor. And sometimes they save the day between errands when nobody wants to cook.

What I love most is how flexible they are. If other fruit is on sale, we swap out apples for what was on sale to save money. If we have leftover ham instead of turkey, we use that. Some weeks we add = popcorn. Other times it’s simply crackers, cheese, and whatever is sitting on the counter or in the icebox no, one is going to want.

Simple Ingredients

Deli turkey or whatever lunch meat you have on hand
Cheddar Cheese or whatever cheese is in your icebox
Crackers
Apple slices or whatever fruit you have
Baby carrots and ranch if you have any
Pretzels or chips
peanut butter for the apples

Easy Lunchable Assembly

Slice the cheese or use pre-packaged cheese if you have it. Wash the fruit and veggies, then fill divided containers or plates with small portions of each item. Keep everything simple and easy to grab. You can set everything out and let everyone make their own launchable.
