It’s a lot of fun to celebrate #FoodHolidays that compliment each other like the following holidays on August 18th, 2025. Let’s start with National Fajita Day #NationalFajitaDay. I don’t know about you but David, Charlie and myself love #Fajita’s and it would have been nice to go out to dinner tonight but there isn’t money for eating out this week.

I could surprise Charlie and David and make Fajita’s at home but that means I would need to go shopping and that isn’t happening either. Instead we will go out later in the week when David gets paid and celebrate all these fun Food Holidays. Would you want to go with us?

August 18th is also National Ice Cream Pie Day #IceCreamPieDay which Charlie hasn’t ever had. But Charlie isn’t much for sweets and may not want to try National Ice Cream Pie Day but that wouldn’t stop you and I from having a slice would it?

Then I also found out on August 18th it’s Cupcake Day (Australia) #RspcaCupcakeDay in Australia and even though we don’t live in Australia we could join them in the celebration and have a Cupcake or two which would go with our Fajita’s and Ice Cream Pie.

Now which of these #Holidays would you most like to celebrate and why?

Here’s a super easy and delicious recipe for10-Minute Ice Cream Pie Recipe that you and your family can whip up in just 10 minutes . If your #Homeschooling your children and have them learning to cook this would be a fun family recipe for them to make for dessert this evening.

Ingredients

  • ½ gallon (2 quarts) of your favorite ice cream or sorbet
  • 1 (9-inch) pre-made graham cracker or cookie crust
  • Favorite toppings: chocolate chips, syrup, sprinkles, chopped fruit, candy bars, etc.

Instructions

  1. Soften the ice cream: Let it sit out until it’s scoopable but not melted.
  2. Layer the pie:
    • Spread a 1-inch thick layer of ice cream into the crust.
    • Add a light layer of toppings.
    • Repeat with another 1-inch layer of ice cream and more toppings.
  3. Freeze: Place the pie in the freezer until firm.
  4. Serve: Slice and serve with optional whipped cream or extra toppings.

Flavor Ideas

  • Mint Chocolate Chip: Mint ice cream, Oreo crust, chocolate chips, syrup
  • Mocha: Coffee ice cream, Oreo crust, espresso beans, chocolate drizzle
  • Strawberry Banana: Fruit ice cream, graham crust, fresh strawberries & bananas
  • Toffee Caramel: Toffee ice cream, crushed Heath bars, caramel & chocolate syrup
  • Caramel Peach: Vanilla ice cream, caramelized peaches, caramel sauce
  • Chocolate Ice Cream: for ol fashion fun
