I wanted to let you know January 28 was National Blueberry Pancake Day #BlueberryPancakeDay I wonder if David’s dad likes Blueberry Pancakes because he loves Blueberries and if so Charlie and I could make breakfast for David’s parents. Would you want to join us?
As for me I would pass on Blueberry Pancakes but would take some Ol’ Fashion Blueberry Pancakes. As for Charlie he eats things with Blueberries in them but I don’t know if he would eat Blueberry Pancakes or not and no, plain Pancakes either.
Charlie prefers Waffles. Can you make Blueberry Waffles? As for David he eats most anything you give him so I’m sure he would eat Blueberry Pancakes if we made them. Then we could set some Blueberries aside for Granny Sherry and Lizzy her Iguana.
Here is a kid-friendly Blueberry Pancake recipe you can make with your family to share with your friends. If your #Homeschooling your children, then you can have them study Pancakes and Blueberries and prepare #BlueberryPancakes in a cooking class you host.
Kid‑Friendly Blueberry Pancake Recipe
Ingredients
- 1 cup all‑purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup buttermilk (or milk + 1 tsp lemon juice)
- 1 large egg
- 2 tablespoons melted butter (cooled)
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
Instructions (Kid‑Helper Friendly)
1. Mix the dry ingredients: Let the kids whisk together:
- Flour
- Sugar
- Baking powder
- Baking soda
- Salt
2. Mix the wet ingredients– In another bowl, combine:
- Buttermilk
- Egg
- Melted butter
- Vanilla
Kids can help crack the egg and stir.
3. Combine gently
Pour the wet mixture into the dry. Stir until just combined — lumps are totally fine. Kids love this step because it feels like magic when the batter comes together.
4. Add blueberries
Fold in the blueberries with a spatula. If using frozen, no need to thaw.
5. Cook the pancakes
Heat a lightly buttered skillet over medium heat. Scoop ¼‑cup portions of batter. Cook until bubbles form on top, then flip and cook until golden.
6. Serve warm
Top with extra blueberries, a dusting of powdered sugar, or a drizzle of syrup.
Kid‑Friendly Tips
- Let kids sprinkle blueberries onto each pancake instead of mixing them in.
- Use a squeeze bottle for easy, low‑mess batter pouring.
- Make mini pancakes for tiny hands.
- Turn it into a “Blueberry Pancake Bar” with toppings like yogurt, bananas, or granola.
Thank you,
Glenda, Charlie and David Cates
