I don’t know about you, but I wish I had known October 17th was National Pasta Day #NationalPastaDay when we made dinner last night because we had left-over Spaghetti and we would have been able to celebrate National Pasa Day.

Does Macaroni count as a Pasta? If so, then I believe we still celebrated National Pasta Day because David made Kraft Mac and Cheese for dinner with our Stove Top Porck Chops and Ranch Style Beans. Let me tell you that Mac and Cheese were so good. I plan on having some for lunch. Would you want to join me?

Tonight, David is cooking Steaks two different ways, so we have dinner for the next two days and no, where not having Pasta again. Although Charlie told me to put the Steaks up and go get the ingredients, we need for Fettuchini Alfredo and we would be able to celebrate National Pasta Day in style.

As much as I would like to have Fettuccini Alfredo with Charlie this evening, I can’t purchase groceries until Thursday and then I will surprise Charlie with dinner and Jr will have to fend for himself because he isn’t sure if he would like Fettuccini Alfredo with Chicken or not. If you’ve never had it I’ve included a recipe so you can make it for your dinner this evening.

Recipe Fettuccini Alfredo with Chicken

Here’s a delicious recipe for Chicken Fettuccini Alfredo that’s creamy, comforting, and easy to make 🍝:

🧄 Ingredients (Serves 6)

  • 12 oz fettuccine pasta
  • 1 lb skinless chicken breasts
  • 1 tsp Italian seasoning
  • 1½ tsp kosher salt
  • ¼ tsp freshly cracked black pepper
  • 1 tbsp extra-virgin olive oil
  • 2 tbsp + ½ cup unsalted butter (divided)
  • 2 cloves garlic, minced
  • ¾ tsp garlic powder
  • ¼ tsp ground nutmeg
  • 1½ cups heavy whipping cream
  • 5 oz Parmesan cheese, grated
  • ¼ cup chopped parsley (optional for garnish)

🍳 Instructions

  1. Cook the Pasta Bring a large pot of salted water to a boil. Cook fettuccine until al dente. Drain and set aside.
  2. Prepare the Chicken Season chicken with Italian seasoning, salt, and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken until browned and cooked through (about 4–6 minutes per side). Remove, let rest, then slice into strips.
  3. Make the Alfredo Sauce In the same skillet, melt ½ cup butter. Add garlic, garlic powder, nutmeg, salt, and pepper. Stir until fragrant (about 1 minute). Gradually stir in heavy cream and bring to a simmer. Add Parmesan and stir until melted and smooth. Simmer until thickened (about 5 minutes).
  4. Combine and Serve Add cooked pasta to the sauce and toss to coat. Top with sliced chicken. Garnish with parsley and extra Parmesan if desired.
