Charlie has been having more and more problems with his stomach with this happening I wanted to change out diet and give us healthier food options which will also help with my weight loss. Plant-based eating isn’t something we’ve had the opportunity to do and will take a lot of talking and convincing to get David or Charlie to try the recipes. Sometimes a mom has to do what she has to do including being sneaky with the foods we feed out family and having this cookbook will allow me to do that in so many ways.

I sat down this morning to browse through the cookbook to find a Soup David and Charlie might eat because its a tad bit chilly in Fort Worth. How about where you are? As I was looking through the cookbook Charlie came and sat next to me and let me know he liked the world on the cover of the cookbook. The greens and blues are so pretty.

You should see all the different categories and the illustrations like the piece of Toast with Jelly on it. In the introduction we learn the Author like me has always loved Vegetables. How about? Then her daughter decided she wasn’t going to eat Vegetables anymore so the Author had to step up her game and find foods that tasted good her daughter Emma would eat. Sounds like my home. How about you?

I like how the Author admitted at first the foods were awful tasting and she had to go around and around trying to figure out how to make the dishes good. You will see she even grills plant-based foods and creates desserts and host Cocktail parties. Isn’t that amazing.

I can’t wait to try Simple Mix-Berry Jam and Biscuits. Would you like to have a slice of Toast and jam with me? Forget the Soup for dinner tonight I think I will make Vegan Louisiana Red Beans and Rice because David not only loves Cajun Food but Red Beans & Rice which is usually spice and isn’t something I can eat. How about you?

For Charlie I would like to make Jackfruit “Chicken” and Waffles because Chicken and Waffles is one of Charlie’s and also my nephew Jason’s favorite meals. How about you? I think I would like to have Corn On The Cob with Chili Lime Vegan Butter although I will have to be very careful with Chili as it can be spicy and bother me but tastes so good.

There is even a recipe for Jambalaya we can prepare for my mother in law Sherry, my sister Debbie and David just don’t expect Charlie and I to try the Jambalaya although Charlie might like it. My favorite part of the book was all the Sweets and with the Holidays around the corner we have lots of new recipes to make.

All in all the plantastic cookbook is the perfect cook for anyone wanting to try a plant-based diet or just want to eat healthier. I hope you take the time to check out this new cookbook as soon as possible and if you do leave me a comment and let me know what you thought of the cookbook and why.
