I don’t know about with your family but there are weeks when life is full of celebrations, and there are weeks that simply ask us to slow down and lean on one another. For my family this week was the second part and I wanted to remind you during those busy, emotional days, complicated dinners are the last thing I want to think about.
That’s when simple meals become some of the most comforting. These Crispy Baked Bean & Cheese Tacos use pantry staples, come together in about 20 minutes, and everyone can customize them with their favorite toppings. Whether you’re feeding a family on a budget or just looking for an easy Taco Tuesday dinner, this recipe is one we come back to again and again.
Crispy Baked Bean & Cheese Tacos
Ingredients
- 8 small flour or corn tortillas and we either use Mission or the Store Brand depending on prices
- 1 (16-ounce) can refried beans and we use the Store brand
- 2 cups shredded Mexican blend or cheddar cheese again store brand unless Kraft is on sale
- 2 tablespoons taco seasoning again we use Store brand
- Cooking spray or a light brushing of oil of any type we use Pam or Store Brand
Optional Toppings
- Shredded lettuce
- Diced tomatoes
- Sour cream
- Salsa
- Jalapeños
- Sliced avocado
- Chopped onions
- Fresh cilantro
Directions
Preheat your oven to 425°F.
Warm the tortillas for about 20 seconds in the microwave so they’re easier to fold.
Spread a layer of refried beans over half of each tortilla. Sprinkle with taco seasoning and shredded cheese.
Fold each tortilla in half and place them on a lightly greased baking sheet.
Lightly spray or brush the tops with oil.
Bake for 8-10 minutes, carefully flip them over, then bake another 5-7 minutes, or until both sides are golden brown and crispy.
Serve with your favorite toppings and enjoy!
Tips
If you’d like to add more protein, cooked taco meat or shredded chicken can easily be added before baking.
Leftovers can be reheated in an air fryer or oven to bring back their crispy texture.

Instructions
- Preheat oven to 425°F.
