
Welcome to a new week as we prepare for the new week and pick up groceries one of the meals we will have this week is Taco’s on #tacoTuesday because this is something everyone in my family will eat and not fuss about. Would you want to join us for Taco Tuesday.
For our family Taco Tuesday is one of those traditions that doesn’t have to be fancy to be memorable. Around our house, it isn’t about buying a lot of extra groceries or spending hours in the kitchen. It’s about taking what we already have, using it wisely, and sitting down together for a meal that everyone can enjoy.
Some weeks we have hamburger tacos. Other weeks we use chicken or leftovers from another meal. Taco night changes from week to week, and that’s part of what makes it fun. No two Taco Tuesdays ever look exactly alike, and honestly, I wouldn’t want them to.
One thing that always seems to find its way onto our table is pinto beans. They never go to waste around here. Pinto beans can be turned into homemade refried beans, stretched into burritos, or served alongside tacos for an easy side dish. Families have been making meals work with simple ingredients for generations, and Taco Tuesday is no different.
When I make my shopping list, I don’t try to reinvent dinner. I just grab the basics. Tortillas are a must, whether they’re flour or corn. Then I add a protein like ground beef, chicken, or steak. Cheese, lettuce, tomatoes, and salsa usually find their way into the cart because everyone likes to build their tacos a little differently.
Of course, Taco Tuesday isn’t only about food. Some nights we pull out cards and play games after supper. Sometimes we turn on a movie and eat dinner from TV trays. Other nights music fills the kitchen while David cooks and everyone talks about their day. Those simple evenings become memories before we even realize it.
That’s why I love Taco Tuesday so much. It isn’t expensive. It doesn’t require a complicated recipe. It simply gives us a reason to slow down and spend time together. This week we’re keeping things simple with seasoned ground beef tacos and homemade refried beans made from pinto beans already sitting in the pantry. Add sweet tea or lemonade, and supper is ready.
Our Taco Tuesday Menu
Tomorrow’s dinner will be seasoned ground beef tacos with homemade refried beans. A lot of people will add shredded lettuce and diced tomatoes, to there Tacos but not here we just use shredded cheese, and Sour Cream for some of or whatever everyone likes best. That’s the beauty of tacos—everyone gets exactly what they want.
To make dinner you’ll need one pound of ground beef, taco seasoning, taco shells or tortillas, shredded cheddar cheese, lettuce, tomatoes, and a side of homemade refried beans made from cooked pinto beans. Sweet tea or lemonade makes the perfect drink to go with it.
If you’re shopping online, this is also a great time to stock up on taco seasoning packets, tortillas, canned tomatoes, shredded cheese containers, storage containers for leftovers, cast iron skillets, and meal prep containers. These are easy affiliate products to recommend because families use them all year long.
David will still be in the kitchen cooking. Everyone will build their tacos their own way. And that’s exactly how Taco Tuesday should be.

Easy Ground Beef Tacos
Ingredients
1 pound ground beef
1 packet taco seasoning
8 taco shells or tortillas
1 cup shredded cheddar cheese
1 cup shredded lettuce
1 diced tomato
Salsa and sour cream, if desired
2 cups cooked pinto beans
Directions
Brown the hamburger meat and drain excess grease. Stir in taco seasoning and prepare according to package directions. Warm the taco shells and prepare your toppings. Mash the cooked pinto beans in a skillet and cook until heated through to make simple homemade refried beans. Fill tacos with meat and toppings and serve with sweet tea or lemonade.
Nothing fancy. Just supper, family, and another Taco Tuesday around the table.
